Even though pasta is typically thought of as fatty, I still eat it all the time! Something about noodles and sauce drives me wild! My issue is that I don’t have a lot of time to cook up a gourmet pasta meal. I need quick hitters that don’t take me longer than 30 minutes to cook. Heavy pastas are out too. I know, I know, Valentine’s Day was over on February 14th, 11:59 pm, a month and a half ago. But for me, my celebration ended this weekend. On Valentine’s Day, my boyfriend surprised with me tickets to see Beauty and the Beast on stage. As a die-hard Disney fan, I could not have been more excited! Yesterday was my boyfriend’s and my one year anniversary. Although both of us are completely clueless in the kitchen, we decided to try our hand at making dinner together. We didn’t want to spend too much money, so we scoured my cabinets and fridge for food to see what I already had. I found about 3 cans of tuna, so we went on to Recipe4Living to find an easy tuna recipe. After a few minutes of searching, we found a recipe for Tuna-Stuffed Pasta Shells. It didn’t sound too difficult and we had most of the ingredients already, so we decided to give it a shot.

Are you one of those people that puts some kind of sauce on every meal you eat? I know several people just like that, and the first that comes to my mind is my boyfriend. Even if the food is already perfectly seasoned or tasty as is, he’ll douse it with any sauce he can get his hands on. Barbecue sauce, sweet and sour, hot sauce, honey mustard, they’re all winners in his book. It can be really frustrating though because sometimes the sauce compromises the original flavor that was intended.

For Lent this year, I’ll be giving up meat. It’s day three and I already feel like I’m being majorly challenged. I’m a picky eater as it is, so cutting out all my chicken and beef isn’t giving me as many options for dinner. The first year that I fasted from meat, I was eating peanut butter and jelly sandwiches almost every day. Thankfully, over the years, I’ve learned a few tricks to survive the Lenten season without feeling too starved of protein.
