A while back, we received some kamut pasta from Eden Foods to try out. Now, I’m sure you’re asking (like I initially did), “What the heck is kamut?“ Eden Foods describes it like this: “The ancient wheat Khorasan (kamut®) is small batch freshly milled and traditionally hand crafted into wholesome, Heart Healthy* 100 percent whole grain spirals…low fat, rich in fiber and made without salt. I finally got a chance to try our newest product from our Recipe4Living Product Review Program. Made by Purity Foods, White Vita-Spelt Rotini seemed perfect for a pasta salad. These yummy spirals are also available in whole grain, but I sampled the gourmet white version. The box has 8 oz. worth of pasta, which equaled to a total of 840 calories. Not too bad. Sometimes when you mix certain ingredients together, they become better than what they taste like on their own. You know, like that saying: “The whole is greater than the sum of its parts.” Well that’s how I feel about the pasta salad you see above. For someone like me who hates pickles, imitation crabmeat, mayonnaise and garlic powder, I never foresaw enjoying a pasta salad that incorporated all four (and yes, this time I went with boxed pasta instead of the alternative).
My sister-in-law introduced this pasta salad to me as an accompaniment to our homemade pizzas. I went along with her plan since she seemed rather excited about it. Who was I to get in the way of a side dish? So what if I didn’t love the ingredients. But low and behold, she was right and I was wrong.
