Even though pasta is typically thought of as fatty, I still eat it all the time! Something about noodles and sauce drives me wild! My issue is that I don’t have a lot of time to cook up a gourmet pasta meal. I need quick hitters that don’t take me longer than 30 minutes to cook. Heavy pastas are out too. As a Chicago food blogger, I’m embarrassed to admit I was shown up by a New Yorker in my own city. Yes, a friend came to visit with one must-go-to restaurant on his list: Riccardo Trattoria, and I had never heard of it. “You’ve never heard of it? All my friends say it’s the best Italian restaurant in Chicago”. Ashamed and dismayed (especially after reading the numerous online reviews that raved about the place), I knew I had to make a reservation to try it on his first night here. And after a pleasing leisurely meal full of friendship rekindling, good wine and even better food, here is what I have to say about Riccardo Trattoria.

When it comes to pasta, penne is my favorite. Maybe you noticed when I used it here, here and here. To me, it’s a blank slate pasta that catches the flavors with which you pair it with. Spaghetti falls off the fork too easily. Linguine noodles are too wide. And shells, well, they just don’t do it for me. So when I noticed this refreshing Penne and Chicken Tenderloin with Spiced Tomato Sauce recipe on Recipe4Living, it reminded me of how great this tube-shaped starch really is and why it rules my pasta world.

If summer isn’t reason enough to celebrate the taste of tomatoes, this recipe is. I’ve always liked tomatoes - served raw in salads, cooked up in sauces, even tomato ketchup! If it’s made from a tomato, I like it. But rarely do I eat a dish that focuses on the tomato. That’s why when I saw this post on Serious Eat, I knew this slow roasted tomato spaghetti recipe was for me.

It’s officially PASTA time! Chew on That was given the honor of hosting Presto Pasta Nights again and we couldn’t be more thrilled to share with you all the delicious pasta dishes we have received. I know that last time we hosted this event, I spent many words professing my love for Presto Pasta Nights and expressing my appreciation toward Ruth of Once Upon A Feast for creating this event. Do me a favor: MAKE THIS PASTA SAUCE FOR DINNER TONIGHT! I think you’ll thank me. It’s absolutely, positively, hands down, 100% the best pasta sauce I have ever tasted. And I’ve had a lot of pasta sauce experience so you must understand how bold of a statement I just made. The best part is: I made it myself! And once you read how easy it is, you’ll be able to make it too!
