Even though pasta is typically thought of as fatty, I still eat it all the time! Something about noodles and sauce drives me wild! My issue is that I don’t have a lot of time to cook up a gourmet pasta meal. I need quick hitters that don’t take me longer than 30 minutes to cook. Heavy pastas are out too. Several weeks ago, I went to Ravinia, an outdoor music venue in Highland Park, IL. It had a huge lawn that is packed with people lounging, listening to the music, drinking and, of course, eating! Over the weekend I made an apple pie that was not only easy but delicious too. Growing up, I was never a big apple pie fan. In fact, it wasn’t until recently that apple pie even appealed to me. There is something to be said about homemade apple pie with homemade filling. The freshness preserves the texture and the taste making a much better pie if you ask me.
