For Lent this year, I’ll be giving up meat. It’s day three and I already feel like I’m being majorly challenged. I’m a picky eater as it is, so cutting out all my chicken and beef isn’t giving me as many options for dinner. The first year that I fasted from meat, I was eating peanut butter and jelly sandwiches almost every day. Thankfully, over the years, I’ve learned a few tricks to survive the Lenten season without feeling too starved of protein.

What if I told you I had a recipe that was easy, tasty, healthy and inexpensive? Sounds too good to be true, right? Well, I assure you it’s not if you make Cornflake Crumb Chicken, another gem of a recipe from my sister in law (the same person who brought you cake, challah and pancakes). Made with olive oil, all sorts of yummy seasonings and cornflake crumbs, you can make chicken for dinner in a pinch!

I’m a big fan of one-pot meals. Partially because it cuts down on the dishes, partially for the simplicity, but also because I really like the idea of all the flavors from all the ingredients melding together in one big pot of yummy-ness. And that’s totally what this recipe is.

I can’t believe it’s the tenth day of 2008 and I haven’t told you about my New Year’s Eve menu yet! I’m quite excited about it and I hope you will be too because I was immensely pleased with how it all came out. But before I tell you about the food, I have a confession to make: I hate New Year’s.
