I absolutely love the transition from summer to fall, watching the leaves change and enjoying the days as they get crisper and cooler. My meals start to switch from barbecue to more wholesome and comforting dishes, filled with hearty vegetables like zucchini and pumpkin.
I always get a little sentimental when the seasons change too, and I try to continue to buy summer fruits until the point of no return. That’s when I finally look at those strawberries and have to tell myself…there is no way that you are eating that! So as the summer begins to wane, and fall rises, here are some amazing fall recipes that I enjoy and I think you will too!

I know we’re a little pie crazy here at Chew on That but the bounty of the fall season just lends itself to great pie! From apples to pumpkins, just about any ingredient that’s popular in the fall can make a great pie or tart. But one vegetable that sometimes gets overlooked in the way of pie is butternut squash pie. Shoved aside by the popularity of other pies, I forgot just how great butternut squash pie can be. It’s a good thing my friend served this at a dinner she invited me to or else I’d still be living without this great pie.

Rosh Hashanah (The Jewish New Year) begins tonight. On this holiday, symbolic foods are eaten in hopes for a sweet, healthy and prosperous year ahead. Apples dipped in honey illustrate the sweet year we hope for while other less-known symbols like pomegranate signify the abundance of merit one hopes for in the coming year. Gourds and squash can also be seen as symbolic Rosh Hashanah foods and since they’re such a fall ingredient, it’s not such a long shot to incorporate them into Rosh Hashanah menus.
I saw this recipe on a very delicious food blog called Sophistimom. She made risotto look so easy (despite knowing that it’s not) and melded delicious flavors that were perfect for my Rosh Hashanah meal. That, and I happened to have ALL of these ingredients in my house already so I knew I had to make it.
