Are you a nut for nuts? I am! I love to snack on lots of different kinds of nuts, from almonds to peanuts and pecans to pistachios. But, I rarely use nuts when I’m cooking. My mind just never seems to equate a nut with a dinner meal. Now, that I’ve done some Recipe4Living research, I know that there are tons of way to cook with all different sorts of nuts. But rather than go through all of them–that would make us all a bit nutty-I’m sticking with almonds! I’ve found ways to use almonds in breakfasts, appetizers, dinners, sides and desserts!

When I found out that today was both National Pecan Day and National Waffle Day, I knew I had to pull out a super delicious recipe that combined the two: pecan waffles! I’m super excited because today is Pancake Day! Also called Shrove Tuesday, this holiday is celebrated on the day before Ash Wednesday as a final feast before Lent. Since you’re traditionally not supposed to eat eggs, sugar, fat, etc. during Lent, today is the day to use up all those tasty ingredients by making all types of scrumptious pancakes!
