It’s the very height of summer. So you’re in the mood for something ultra-fresh that won’t bloat you-up like a balloon or put your family into a food coma.  It should be healthy, satisfying and something that gives you a reason to visit a farm stand or green grocer.

Oh, and you’re also feeling just a little bit daring.

That last bit cinches it. You’re in the mood to finally make some zucchini pasta.

Talk about fresh, light and uber-nutritious. Making thin strips of zucchini pasta is super easy to do, it cooks up quickly and it’s likely that most people have never tried to prepare summer squash this way at hope. It’s low-glycemic index, gluten-free, vegan and paleo-friendly, depending on the toppings that you choose to pair with it, though meat or cheese lovers can still find creative ways to incorporate it into a satisfying meal for them, too, depending on the toppings.

I’ve blogged at length about the versatility of Zucchini in another blog, so frequent readers of Chew On That already know of my admiration for the tastiest of summer squashes. But Zucchini pasta, in particular, is a marvelous canvas for Italian, Greek and Asian dishes that normally require noodles. But it’s a canvas that brings something to the table, literally. And that thing is freshness. Zucchini pasta will transform even the heaviest pasta toppings into dishes that taste as refreshing as the season.

Which brings me to today’s post. I thought I’d share five of the best zucchini pasta recipes that I’ve encountered when searching for new ways to prepare my favorite seasonal squash. None of these recipes are particularly hard to make, but trust me – all will be creative additions to your normal summer repertoire.

A simple one, but a good one to get you started. Try making this a couple times, and you will be an expert before you know it. The basic recipe is money, but I’d also suggest maybe changing up the seasoning a little with a dash of coarse Himalayan salt or a pinch of some chopped fresh herbs – a little marjoram, thyme and flat-leaf parsley come to mind – right before serving.  This dish is wonderful as a diet conscious main or a delicious side.

Refreshing and surprisingly satisfying at the same time. Probably the healthiest recipe on this list, this pasta salad can be served hot or cold.

Finally one for seafood lovers, just to showcase zucchini pasta’s flexibility. Try this one as a decadent one-dish main course, paired with a minerally-white, such as a Sancerre, Muscadet, Chablis or Loire-Valley Chenin Blanc to cut and contrast with the richness of Alfredo flavors and breaded shrimp.
