Meredith’s Yummy Ciabatta Pizza
Something important to know about me: I have the most intense and spontaneous craving for pizza. I can’t explain it. I’d like to think that I have a sophisticated palette, but there are some days when the only thing pleasing my taste buds is a warm delicious pizza.
So about a year ago I was desperate to break my habit of buying frozen pizzas, when I came across a ciabatta pizza recipe I have now perfected. This recipe is not only more delicious and healthy than your average frozen pizza, but it’s easy to make and looks more expensive than it actually is! ‘The secret? Ciabatta bread instead of pizza dough. This elongated loaf of bread sliced in half and seasoned and dressed with my favorite toppings has become a new staple in my kitchen. Don’t believe me? What You Need:
- One loaf of Ciabatta Bread cut length-wise (I used a multi-grain loaf from Trader Joe’s)
- 2 Tbs Tomato Paste
- 2 Cloves of fresh Garlic (minced)
- 2 Tbs Olive Oil
- 2 tsp Oregano
- salt and pepper to taste
Pizza Toppings: You can put whatever you want on these pizzas, but here’s what I used:
- Sliced Black Olives
- Sliced Genoa Salami
- Sliced Heirloom Tomatoes
- Sliced White Mushrooms
- Goat Cheese
- Fresh Arugula
What To Do:
Preheat the oven to 375. Mix all of the sauce ingredients together and spread on the ciabatta slices. After that, it’s your opportunity to get creative. Once I layer all my ingredients, I like to top it off with a sprinkle of fresh olive oil. Pop in the oven for 15 to 20 minutes. I typically judge if it’s ready by the top of the goat cheese turning a light toasty brown.
Let the pizza sit for another 5 minutes. I slice my pieces in half so it’s easier to eat. Once loaf makes about 4 servings. I also like to top my finished product with some arugula.
So there you have it, the guilt-free answer to my never-ending pizza craving. Frozen pizzas are nothing but a distant memory to me!
