A Mind-Blowing Zucchini Side-Dish

This week I wanted to try something new. Considering my love for anything with goat cheese, I decided to test out a lemon, goat cheese and zucchini side dish. It seemed easy enough. Let me be the first to tell you that you are just 5 minutes of cooking away from quite possibly the best side dish I’ve ever had!

The most time consuming part of this recipe is in the preparation. It just takes so darn long to make the ultra thin zucchini strips with a potato peeler. But, trust me it is so worth the struggle in the end.

 

Zesty Lemon, Goat Cheese and Zucchini Side-Dish

Ingredients:

2 med. zucchini

1 lemon

2 tsp. crushed basil

2 tsp. black pepper

2 tsp. sea salt

dash  parsley

2 Tbs. olive oil

2 Tbs. goat cheese

Directions:

The first step is to cut both ends off of your zucchini and begin making the strips with the potato peeler. Make sure to peel away from your face and fingers, you don’t want to slip up and slice yourself!

Continue making your strips all the way around to the seeds. Once you hit the center, you’re done. You can still chop up the rest and add it to a salad so as not to waste the centers of the zucchini.

Once you have both of your zucchini in strips, set them aside and begin heating your olive oil for a couple of minutes in a medium skillet. Add in the zucchini, crushed basil, half a lemon’s zest, half a lemon’s juice, salt and pepper. Make sure to continue tossing the zucchini until they are well coated with the seasonings. Cook them for a couple minutes, you don’t want them soggy. Add the goat cheese just before you finish by delicately folding the zucchini around the cheese.

You’re done and ready to serve! I plated mine with a couple slices of fresh tomato, the rest of the lemon zest and a dash of parsley for color.

 

It’s incredible; like a sort of lighter mac and cheese! I know I just compared zucchini to mac and cheese but seriously wait till you try this! The creamy goat cheese just melts in your mouth from the warmth of the zucchini strips. The strips miraculously stand up to the heat and taste almost like ultra thin noodles. Remember to go light on the other seasonings because the lemon is so strong. It is the perfect flavor combination to enjoy in the summer.

Comfort food taste with light fare health benefits, doesn’t get much better than that right?

Next time I make this side I am actually going to turn it into a main course! It’s just too good to play second fiddle to anything else. I will pair it with chunks of lightly seasoned chicken and tomatoes to give it a little more substance.
