An Easy Snack or Meal for this Weekend

The great thing about making pizza at home is that it’s totally customizable and you can include your absolute favorite ingredients. Want to mix Parmesan and mozzarella cheeses? No problem. Hoping to get in your fix of spring produce? Toss in your favorite greens and vegetables.
The Portabella Pizza bakes in 10 minutes flat, and there’s no fussing with a dough crust. Instead, just flip your portabella mushroom, stuff it with your favorite ingredients (we used bacon and spinach — yum) and top it with cheese! Jen’s 5-Ingredient Portabella Mushroom Pizzas
- 2 portabella mushrooms
- 3 slices bacon
- 15-20 spinach leaves
- 1 tsp. olive oil
- 1/4 C. mozzarella cheese
Preheat oven to 400 degrees.
Fry and crumble bacon. Wilt spinach leaves in olive oil for 2-3 minutes in frying pan.
Clean your portabella mushrooms and remove stems.
Put wilted spinach and bacon in upside-down mushroom cap, with mozzarella cheese on top. Put portabellas on baking sheet.
Cook the portabella pizzas in the oven for 10-12 minutes and enjoy!
Variations: Feel free to add whatever vegetables you want to this pizza. You can also make them in smaller mushrooms to serve as appetizers.
