I Can’t Bake… So Here’s My Go-To Dessert
Since tomorrow is Christmas, I thought I’d give you a gift. As you know, I can’t bake, and I’m not ashamed to say that. So when I’m tasked with making dessert, I usually go for the easiest possible dessert. The recipe most frequently in my war-chest these days are Easy Chocolate Cream Cheese Truffles. These cream cheese truffles are so delicious and rich, they’ll be a hit at your next holiday party. Just don’t forget to give your guests a pillow to take a nap on afterward!
Makes about 24 truffles, but the recipe is easily duplicated or halved.
Prep time : 1 1/2 hours
1 box cream-filled chocolate sandwich cookies
1 8-oz. brick of cream cheese, room temperature
1 bag chocolate chips
Put the sandwich cookies in the bowl of a food processor and process until they are a powdery texture. This usually takes 3 minutes.
Once the cookies are a uniform powder, add the cream cheese to the cookies and process another 3 minutes. Scrape down the sides if there is buildup.
When the cream cheese and cookie mixture is uniform, scoop it out into a plastic dish, and place in the freezer for about an hour. It won’t become completely solid, but it will be stiff enough to work with.
After removing it from the fridge, use a spoon to shovel little bits of the mixture out, and roll them into balls, approximately 1-1.5 tablespoons.
Place the individual pieces on a cookie sheet covered with parchment paper, and put a tooth-pick in each piece. Once this is done, they need to go back in the freezer for at least an hour.
Melt the chocolate chips in the microwave, or in a double boiler.
Take the pieces out of the freezer, and dip them in the melted chocolate, holding them by the tooth pick, and put them back on the cookie sheet. Once this part is done, they will need to go back in the freezer for another 45 minutes or more.
Pull out the toothpick prior to serving and eat!
