Is It a Sandwich or a Cake?
Just when I thought I had seen every kind of cake out there, I discovered the sandwich cake. At first glance it looks like a cake, but really it’s a sandwich in disguise. I was so intrigued I had to learn how to make it.
I started browsing around Pinterest for several different recipes and discovered you can make just about any sandwich you like from chicken and roast beef to vegetarian. The proper name for this cake is smörgåstårta which means sandwich cake in Swedish.
This Scandinavian dish is popular in Finland, Sweden and Estonia and is served at celebrations like birthdays and weddings.
This recipe for a Swedish sandwich cake is truly decadent. The “cake” is made out of layers of bread, salmon, smoked herring mousse, cucumbers and mustard sauce. Talk about a mouthful!
The cake is then frosted with a cream cheese mixture that looks exactly like vanilla frosting. One blogger beautifully decorated her cake with salmon, shrimp, hard boiled eggs, radishes and parsley.
I also want to try this recipe that layers cream cheese, cucumbers and avocados. Doesn’t it just sounds light, fresh and delicious?
