Cinco de Mayo is over, but Chew on That has all the recipes you can make with your party weekend leftovers. We also threw in some of our favorite Mexican desserts that are certain to please! Keep reading for all the recipes.

These are terrific recipes to utilize when you have an abundance of leftovers. Whether you are craving a Mexican rice dish, pork crockpot or even some ‘shrooms, these recipes have it all. Keep reading below the leftover recipes for some of our favorite Mexican desserts. Even if you don’t have Cinco de Mayo leftovers, you can certainly make one of these delicious sweet treats!


Southwestern Style Pork Soup: Almost too hearty to be called a soup, this recipe is a great way to use leftover pulled pork. Such a crowd-pleaser, I can’t keep it in my house! It’s great with crackers or your favorite tortilla chips.

Mexican Chicken and Rice Casserole
: This Mexican chicken and rice casserole be made from leftovers or with fresh chicken. It’s great with chicken but you can also use other meats of your choice!

Leftover Taco Casserole: Next time you’re making taco meat, double the recipe  and use the leftovers to make this delicious and satisfying casserole.

Mushroom and Chicken Tamalon: Mushrooms in Mexican food? You bet! This casserole-size tamale is baked rather than steamed, which makes it easy to prepare. A great dish to make with leftover chickem, and a crowd pleaser at any potluck.

: This was a ‘what do I do with the leftover chicken?’ moment that blossomed into a family favorite. It’s spicy but always delicious. It’s really quick to prepare— just the right choice when the kids have friends over!

Flavorful Multi-Purpose Crockpot Pork: This is quick and delicious! You can use it in tacos, tostadas, sandwiches, or over rice.


Fried Ice Cream: If you have never tried fried ice cream, this recipe will open your eyes! It’s delicious.

Mexican Bananas: Crispy bananas with cinnamon, wrapped in tortillas and drizzled with chocolate.

Churros: This dessert is a real treat! Covered with cinnamon and sugar, it’s crunchy and sweet.

    I’m glad you were able to lose 20 pounds from rednaig this! Makes me feel really happy that I was able to help. Were you able to keep it off? So what worked best for you? Was it easy? You must feel really great physically and mentally! When I lost weight, I was so happy, lot more energized, and positive! I know at 15, it was easier for me to lose weight just because I was more active. But as I got older, it became a little harder, so I thought about it and came up with those techniques that really helped me, and now it is very easy. I also did what you did, bought clothes that I knew I couldn’t fit in at the moment, but would be able to after losing some pounds. This gave me incentive and a goal, if I don’t lose weight, I can’ wear that sexy outfit I just bought You are smart for wanting to be healthy and getting your life together at a young age, keep it up! Developing good habits now will definitely help you in the future
