Product Reviews: Skinny Cow Ice Cream and Elana Amsterdam’s Gluten-Free Cupcakes!
Cupcakes and ice cream! What isn’t there to love? I was recently excited upon learning that Magnolia Bakery of NYC is expanding with a Chicago location and my colleagues were all enjoying a variety of ice cream just this week, so no one is immune to the allure of a sweet treat or two! Read on to learn more about these tasty ice cream treats and this delectable cookbook.
Ice cream is a treat that is definitely more popular in the sweltering summer months, but it is always a classic choice regardless of the time of year because of how it reminds us of childhood, the ice cream truck music…oh, who are we kidding? Ice cream is decadent, tasty and always preferred because it’s sweet and when we eat it, we feel good!
It’s nice to feel good minus the calories, though. Skinny Cow knows that. That is why they make products like single-serve ice cream that has only 150 calories and 4 grams of fiber per serving. With flavors like Strawberry Cheesecake, Dulce de Leche and my personal favorite, Chocolate Fudge Brownie, there is a variety to please every palate. I definitely couldn’t tell that this cup of ice cream was low in fat. It was tasty and perfect for that afternoon lull. It was cool and refreshing and the perfect pick-me-up! Their Cookies ‘n Cream ice cream bars were drizzled in hard chocolate and nearly disappeared from the office freezer- a definite sign of a dessert hit.
From ice cream to brownies, I received a copy of Elana Amsterdam’s Gluten-Free Cupcakes. Not only is the cover of this cookbook kitschy and cute, the recipes inside are equally as sweet, especially the Chocolate Peanut Butter Cupcakes. The 50 recipes included in the book are all made with almond or coconut flour and range from savory Scallion Goat Cheese Muffins to Flourless Chocolate Hazelnut Cupcakes with sea salt and dark chocolate chips.
