Fun Party Recipe: Sweet & Spicy Cranberry Meatballs
Yesterday, I told you about the life-changing taco dip I made for my housewarming party, and today I’m going to share another fun and easy recipe I made: sweet & spicy cranberry meatballs. You only need a few ingredients for this one, plus you can make them on the stove or in your crockpot! Awesome.
Don’t worry- the picture above is NOT of the finished result. I actually forgot to take pictures of the end results, but they looked like tender meatballs with a thick cranberry glaze….mmm…
Here’s all you need to make this simple appetizer:
-two 28-oz. pkgs. frozen meatballs (I used Market Pantry Homestyle Meatballs from Target)
-three 14-oz. cans jellied cranberry sauce
-4-5 chipotle chili peppers in adobo sauce (canned), chopped
-two 20-oz. cans pineapple chunks in juice, drained
All you need to do is mix up the pineapple, chopped chilies, and cranberry sauce- it will be chunky- then add the mixture to the meatballs.
You can either cook the meatballs over the stove for a few hours on low heat (I left mine on very low heat throughout the party, too) or cook the meatballs in your slow cooker on low for a few hours.
Everybody enjoyed these meatballs- they said they were very tender and flavorful- and people liked how they were mostly sweet with a bit of spice from the chilies.
Next time, I might make halve the recipe, as we couldn’t even come close to finishing them!
