A Super Springtime Dinner Menu

Main Course (Photo #1): Spelt Spaghetti Primavera
Full of fiber, low in fat, and packed with veggies, this dinner is not only easy, but nutritious, too!  It features tasty spring ingredients such as cauliflower, zucchini, broccoli, carrots, and artichokes- yum!  If you cannot find spelt pasta at your local grocery store, you can use regular or whole-wheat pasta.

Here are the ingredients you need to buy:
* 1 pkg. Eden Organic Spelt Spaghetti
* 3 Tbs. Eden Selected Extra Virgin Olive Oil
* 2 cloves garlic, minced
* 2 C. broccoli florets
* 1 C. cauliflower florets
* 1 C. zucchini, sliced
* 1 C. carrots, sliced thin
* 1/2 C. artichoke hearts, water packed, quartered
* 1/2 tsp. Eden Sea Salt
* 2/3 C. water
* 1/4 tsp. freshly ground black pepper, or to taste
* 2 Tbs. fresh basil, finely chopped

Extremely simple to make but full of flavor, this salad incorporates two of our springtime favorites: spinach and strawberries!

Here are the ingredients you need to buy:
* Salad
* 1 pt. strawberries, sliced
* 9 C. fresh spinach
* 1 Tbs. sliced green onion
* 1/2 C. toasted almond slices

* Dressing:
* 1/4 C. salad oil
* 2 Tbs. cider vinegar
* 1 tsp. poppy seeds
* 2 Tbs. sugar
* 1/2 tsp. paprika
* 1/8 tsp. Worchestershire sauce

Dessert (Photo #3): Rhubarb Pie
This beautiful pie only requires 8 ingredients (most of which you probably already have in your kitchen!)  Just pick up some fresh rhubarb at the grocery store  or farmer’s market and you’re on your way to a tasty treat!
