A Mexican Easter Menu!

Traditional Easter recipes are all well and good, but try changing up your Easter menu this year with some Mexican dishes!  No, we’re not talking enchiladas for Easter breakfast- you can incorporate simple and tasty Mexican recipes into your Easter menu without neglecting your favorites.  Here are some to try this year!

Egg Fajitas

For a brunch, set up this egg buffet as self serve. Also serve with fresh fruit and hash browns.

Ingredients

* 8 flour tortillas
* 16 large eggs
* 1/2 C. scallions, or green onion tops
* 2 Tbs. Dijon mustard
* 1 tsp. salt
* 1/2 tsp. pepper
* 4 tsp. butter or margarine
* bacon, ham, Canadian bacon or crumbled breakfast sausage
* 12 oz. shredded cheddar cheese

Mexican-Style Eggplant Casserole

Creamy and cheesy, this casserole is simply wonderful!

Ingredients

*1 med. eggplant
*1/2 tsp. garlic salt
*1/2 C. canned jalapeno peppers
*2 C. canned tomato sauce
*1/2 C. sour cream
*1/2 tsp. ground cumin
*1 1/2 C. grated cheddar cheese

Spoon bread is similar to cornbread, but it’s a bit more like a corn pudding than bread.

Ingredients

*1/2 C. shortening
*1 lb. cheddar cheese
*1/4 C. canned jalapeno chili peppers
*1 C. cornmeal
*2 eggs
*one 15-oz. can cream-style corn
*1 tsp. salt
*1/2 C. milk
*1/2 tsp. baking soda

*1 1/2-pound loaf cooked egg bread
*1/4 C. blanched almonds
*4 C. granulated sugar
*1 1/2 C. water
*2 C. shredded coconut
*3 eggs
*1 Tbs. flour
*1 C. shortening
*1 cinnamon stick
*3 Tbs. raisins
