March Madness: (4) Corn vs. (5) Zucchini

Upset city! Blueberry defeated peach, 60% to 40%.

Two classic summer vegetables that make their way into just about every barbecue in one way or another. Will corn or zucchini move on to the second round?

Corn

Hamburger Corn Casserole – This is a easy all-in-one meal to prepare that the family will love! I usually serve this with some form of bread (i.e. corn bread).

Corn Souffle – This recipe is easy and so simple; great for big meals like Thanksgiving coming up. Tastes mm good, it looks too good to eat sometimes with its bright yellow texture.

Grilled Corn on the Cob – The best summer food of all time. If the husks burn don’t worry, blow them out or rub a little water on them.

Zucchini

Creamy Zucchini with Linguine – With Parmesan cheese, this Vegetarian pasta is hearty enough for a complete meal.

Zucchini Pie – This is a great pie which includes zucchini, onion, cheeses and bacon.

Zucchini Bread – The recipe makes a very moist bread, so make a few loaves and freeze them for a rainy day!
