Happy Pancake Day!

I’m super excited because today is Pancake Day!  Also called Shrove Tuesday, this holiday is celebrated on the day before Ash Wednesday as a final feast before Lent.  Since you’re traditionally not supposed to eat eggs, sugar, fat, etc. during Lent, today is the day to use up all those tasty ingredients by making all types of scrumptious pancakes!  We’ll share some of our favorite pancake recipes after the jump!

This is completely embarrassing, but I had never made pancakes in my life until last year!  Waffles, yes.  French toast, no problem.  But pancakes?  I was always scared that when I made them, they’d be burned on the outside and gooey in the middle.  However, I finally made some (pumpkin ones!) and they actually turned out to be really tasty and perfectly cooked!

I used the “bubble method”- when little bubbles start to form on the top of the pancake, it’s time to turn them over.  Worked like a charm.  My only problem is that I didn’t think about how I was going to keep the finished pancakes warm while I was making the rest of them, so I ended up with some chilly pancakes.  Any suggestions?

Anyways, here are a few of my top picks for Shrove Tuesday/Pancake Day pancakes!  Since today is a day of indulgence, I decided to pick the sweetest, most delicious pancake recipes around. Here they are:

Apple Pancakes with Maple Crusted Walnuts: The only thing I could think of that could make apple pancakes even better is nuts. And the only thing I could think of that could make nuts even better is a buttery maple coating!  Put them together, and you have a hell of a recipe!

Coconut Mango Pancakes: This recipe is like a Mango Lassi transformed into a pancake – an Asian twist on an American breakfast classic. Eat them with honey or syrup. They make a delicious dessert with vanilla ice cream and some fresh diced mango.

Cinnamon Honey Pancakes: This recipe is one of our top-rated pancake recipes on the site, and we can see why!  Who doesn’t love the flavors of cinnamon and honey together?

Strawberries and Cream Pancakes: More of a dessert than a breakfast, this recipe is guaranteed to please family members of all ages.   They look so pretty, too!

Stuffed Caramel Banana Pecan Cream Pancakes: I think I may have saved the best for last! Pancakes stuffed with cream cheese, baked with pecans and sliced fresh bananas, and covered in a warm, caramel sauce.
