Lundberg Wild Blend Side Dish
Rice is a perfect accompaniment to any meat dish, especially chicken. Usually, my family just eats plain white rice or brown rice. But we were really intrigued by Lundberg Gourmet Rice Blend. It was definitely a different type of rice, and while it didn’t impress me as much as I hoped it would, it was still a pretty good side dish.
Here’s the description on the product’s website: “Colorful to the eye, delightful texture and full-bodied flavor and aroma all come together in this blend of long grain brown rice, sweet brown rice, Wehani®, Black Japonica™ and select wild rice pieces. Wild Blend® is versatile, so serve it up with hearty meals or subtle seafood dishes.”
My favorite part of this product was that it combined a variety of different types of rice. Here’s the recipe that my mother and I used.
Ingredients
• 1 C. Lundberg Wild Blend
• 2 C. water
• 1 Tbs. butter
• salt
Directions
Rinse rice. Put all ingredients in pot with tight-fitting lid. Bring to boil, reduce heat, cover and simmer 45 minutes. Do not remove lid. Remove from heat and allow to sit covered for 10 minutes.
I thought this dish was pretty tasty, but it definitely could have been cooked a little longer. It came out al dente, and I prefer my rice to be a little softer. In retrospect, using a rice cooker might have been the better option. I would try this dish again, and maybe add in some chicken. I thought the different types of rice gave this dish a lot of flavor, and almost made it its own main course. Definitely a hit!
