A Favorite Meal Memory

Everyone has a meal or two that sticks out in their memory.  A meal that was so delicious that you can’t forget it.  A meal that you can still taste if you want to.  One of my favorite meals that I had was not a gourmet meal whatsoever. It was actually from a little roadside service station in Egypt.

I was 21 years old and I had just spent the week in Cairo with some friends.   After our trip to Cairo, we decided to head to a little resort on the Red Sea called Dahab, so we hired a car and embarked on the 6 hour journey.

About halfway through the trip, we were all starving, but didn’t know how to tell the driver that we wanted to stop (with the lack of Arabic and all!)  Finally, he pulled over for gas and we ran inside the service station.  We looked at the menu and all decided on one thing: koshari.

Koshari, also spelled “koshary,” “kushari,” and “kosheri” is an Egyptian dish made from macaroni, rice, chickpeas, lentils, and tomato sauce.  Talk about every fiber-filled ingredient in one bowl!  It’s nothing too special, but it’s a popular dish and there are entire restaurants in Egypt that serve just this!

The man served us up the koshari in little tin bowls with tin spoons (much cruder than in the photo above).  They didn’t look very clean but, frankly, we didn’t care.  We were so starving that our food was gone in seconds.  Due to our extreme hunger and the filling nature of the dish, the service station koshari ended up being one of my top meals I have ever eaten. I don’t think I will ever forget how it tasted.
