A Delicious and Awesomely Easy Meal to Make for Guests!


This past Saturday, when I was in Minneapolis, I visited my uncle and his girlfriend.  They had invited my boyfriend and myself over for dinner to catch up.  While we were there, we were served one of the best (and easiest to make) dinners I have had in a LONG time.  From that moment on, I decided that this is the meal I would make whenever I have guests over.  It’s quick, it’s yummy, and it’s so easy that even I can make it!  Read what it is after the jump!

We started off with some wine and appetizers.  There were some crackers laid out, along with two of my favorite spreads, hummus and chicken liver pate.  The great part about making these two tasty spreads is that you can make them in advance and store them in the fridge, which keeps you from having to juggle ten things at once when the guests arrive.   Try these easy recipes for hummus and pate:

In addition to the crackers and spread, there was a big plate of shrimp and cocktail sauce laid out.  This is another great make-ahead appetizer to try!  Here’s the cocktail sauce recipe I plan to use in the future:

After we snacked on some appetizers, it was time for the. main course We had some grilled chicken breasts, one of the easiest dishes to make.  This isn’t the exact recipe they used, but it’s a great one:

We also had a salad with mixed greens, shredded carrots, tomatoes, avocadoes, and feta cheese.  It was very simply tossed with olive oil and balsamic vinegar, then some salt and pepper were cracked over the top for additional flavor.  It was divine.  Here’s another great salad recipe to try:

We also had some simple garlic baked potatoeson the side.  These were cut into thin slices, but not all the way through the potato, creating an accordion-like potato.  These were brushed with butter, sprinkled with salt and pepper, and had thin pieces of garlic between each slice of potato.  Soooo good.  The best part is that they didn’t even need anything else on them!  Here’s another tasty baked potato recipe for you to try:

Finally, we had tiramisu for dessert.  This is yet another perfect make-ahead dessert you can make the night before to save time.  And you don’t even have to turn on the oven to make it!

The dinner was definitely memorable-  I always enjoy meals that taste great and are simple to make.  This will surely become my go-to meal for guests from now on!
