Cocktail Hour: Captain’s Vacation

This week’s Cocktail Hour cocktail takes rum, pineapple juice, and lemon-lime soda, and combines them to make a delightfully tropical concoction! Read more to get the recipe for one of my favorite Cocktail Hour cocktails so far!
I finally got my hands on some rum, thanks to a BYOB Memorial Day BBQ at my place! Good thing, because I have been dying to try out one specific drink that I keep seeing pop up all over Recipe4Living. It’s called a Captain’s Vacation and it looks AMAZING. I mean, how could you see this photo and not want to make this?

I loved that it was super easy to make, had only a few ingredients, and looked pretty, too. Here’s the full recipe:
* ice cubes
* 6 oz. pineapple juice
* 1 1.5-oz. jigger spiced rum
* 1 C. lemon-lime flavored carbonated beverage
Fill a glass with ice. Pour in the pineapple juice and spiced rum. Top off with enough lemon-lime soda to fill the glass.

Note #1: I didn’t have any pineapple juice, so I just poured off the juice from a can of pineapple. The amount of pineapple juice in the can ended up being EXACTLY 6 ounces, too! I’m a genius.
Note #2: I didn’t have any spiced rum, so I used Bacardi Gold, instead.
Note #3: You will not use anywhere near a full cup of soda. If you actually fill the glass with ice like the recipe says, you will only end up having room for about 2 ounces of soda.
Note #4: I have no idea how to beautifully layer the drink like it is in the photo.
But let’s get to the tasting, shall we? One thing to keep in mind: I’m not a huge fan of rum. Well, I hate rum, actually. When I took my first sip, all I could taste was rum and I was not too pleased about that. However, after mixing it up a bit more, I started slurping down that drink like I had spent a week in the desert.
It was GOOD. Really good. Very refreshing and very tropical- definitely a sitting-by-the-pool kinda drink. Next time, I might put in less ice and more soda, as the pineapple juice dominated the flavor. And spiced rum would definitely add a little something to it.
Overall, this is one of my favorite Cocktail Hour beverages so far, and I don’t even like rum! It’s the perfect summer cocktail and a must-try, for sure!
