Elegant And Easy Bar Cookies


Although spring has sprung in many ways, it was still cool enough to bake this weekend. So I decided to make my family’s favorite bar cookie, Dolly Madisons.
Every year right before Thanksgiving I get together with my mother-in-law and other members of our extended family for the annual Christmas Cookie bake-athon. Dolly Madisons are one of the dozens of cookies we bake but for me, this is a great one to make any day of the year because it’s so easy.

Melding together the richness of chocolate and coconut it’s an easy and elegant way to make dessert. Named after the famous First Lady who made her reputation as “The Hostess With The Mostess”, these cookie bars look elegant but are so easy to make you can even serve them at parties.


1 stick butter
2 C. semi-sweet chocolate chips
1 1/2 C. crushed graham crackers
1 1/3 C. flaked coconut
14 oz. can sweetened condensed milk


Preheat the oven to 350 degrees. Place butter in a 9″ x 13″ pan and place in the oven until melted. Sprinkle the graham cracker crumbs evenly over the butter and press down with a fork to form a crust. Add chocolate chips evenly over the crust and top with coconut. Pour condensed milk evenly over the entire mixture to cover coconut completely.

Bake for 25-30 minutes or until golden brown.

    I grow up (in the South) and we called these Hello Dollys. But we also put a layer chopped pecans. Try then again with pecans or even with half chocolate ships and half butterscotch chips. Yummy and one of my very favorite cookies ever!
