Let’s cut right to the chase: it’s fall (read: it’s apple season). And that means apples are everywhere! Why not use them in your next delicious dessert concoction? I say we should which is why this autumn-flavored cheesecake recipe from Recipe4Living caught my eye. Not only is it a cheesecake (which in most cases is good enough!) but it incorporates apples and cinnamon in a very delicious way. So if you’re looking for something to bring to a potluck or just an impressive dessert for a gathering at your own place, try this one on for size!

Autumn Apple Cheesecake

This is a very simple recipe that can be totally homemade or made with a store-bought graham cracker crust. A favorite of my family!


* Crust:
* 1 C. graham cracker crumbs
* 3 Tbs. sugar
* 1/2 tsp. cinnamon
* 3 Tbs. margarine, melted
* Filling:
* 2-8 oz. pkgs. cream cheese, softened
* 1/2 C. sugar
* 2 eggs
* 1/2 tsp. vanilla
* 2 C. apples, diced
* 1/3 C. sugar
* 1/2 tsp. cinnamon


Combine crumbs, sugar cinnamon and margarine; press onto bottom of a 9-inch pie plate. Bake at 350 for 10 minutes. Combine cream cheese and sugar, mixing at medium speed until well blended. Add eggs one at a time, mixing well after each egg. Blend in vanilla. Pour over crust. Toss apples with combined sugar and cinnamon. Spoon over cream cheese. Bake at 350 degrees for 1 hour and 10 minutes. Cool then chill overnight.
