Easy Cornflake Crumb Chicken

What if I told you I had a recipe that was easy, tasty, healthy and inexpensive? Sounds too good to be true, right? Well, I assure you it’s not if you make Cornflake Crumb Chicken, another gem of a recipe from my sister in law (the same person who brought you cake, challah and pancakes). Made with olive oil, all sorts of yummy seasonings and cornflake crumbs, you can make chicken for dinner in a pinch!

Cast of ingredients: Cornflake crumbs, olive oil, onion powder, garlic powder, whole oregano, salt and pepper.

Take a package of chicken thighs, breasts, legs or what have you (at room temperature, skin removed) and place in a baking dish. Cover with olive oil.

Now pour a mound of cornflake crumbs onto a small plate. Take each piece of doused chicken and press into the cornflake crumbs and cover both sides.

Return chicken pieces to the pan and start seasoning to taste. Don’t be skimpy!

Now bake in a 350-degree oven for 1 hour and let stand to cool.

Serve with these delicious carrot muffins and you’ve got yourself an easy tasty meal!

Ingredients
Chicken, cut up into quarters
olive oil
cornflake crumbs
salt
pepper
onion powder
garlic powder
oregano
Directions
Skin the chicken pieces. Baste them with olive oil on both sides. Pour cornflake crumbs into a plate, and dip each chicken piece to coat it on both sides. Place into baking dish. Discard any leftover crumbs. Sprinkle seasonings over the chicken to taste, and bake at 350 degrees for 1 hour.
