The Best Pancake Recipe Ever

I used to think these raspberry banana pancakes were good but friends, I’ve found a pancake recipe that’s even better. Actually I shouldn’t take credit, my sister in law was the recipe finder and she made chocolate chip strawberry pancakes for dinner one of the nights while I was visiting. One bite of the perfectly cakey pancakes (pan cakes are supposed to be cakey not floppy!) and I immediately erased all other pancake recipes from my memory.

The Best Pancakes Ever

Looking for that pancake with the perfect texture and taste? Look no further! Not to mention, these have chocolate chips and strawberries in them!

Ingredients

3 C .flour
6 Tbs. sugar
6 tsp. baking powder
1 1/2 tsp. salt
3 lg. beaten eggs
6 Tbs. oil
milk – enough to make pourable – at least 2 1/4 C.

Mix ins:
chocolate chips
chopped strawberries

Directions

Combine dry ingredients in a large bowl. Add wet ingredients. Mix in enough milk to make the batter pourable.

Heat oil or margarine on pancake griddle. Add a ladleful of pancake batter. Throw in toppings such as chocolate chips and chopped strawberries. Heat each pancake 1-2 minutes until golden brown, flip and let the other side become golden brown. Serve.

    I made these this morning for Father’s Day, and let me tell you- they are INCREDIBLE. My dad, along with everyone else, loved them. I used 3 cups of milk and added a tablespoon of vanilla. I didn’t add anything to them (like strawberries or chocolate chips)- they didn’t need anything. So fluffy and amazing! Thank you for the recipe!!!!

    Randomly found your blog while searching for a pancake recipe this morning. They were delicious! I used melted butter instead of oil and only need 2 cups milk. And next time I might dial down the sugar and up the salt a bit (depending on mix-ins, though). Loved the texture!
