Excellent! Now that's the perfect meringue pie, totally the opposite to mine, LOL. March is the perfect time to make the pie, the humidity would be down and so would the temperature. Maybe I will try again on "pie day" next year. My husband is a major geek, he would be thrilled if I did that. He memorized pi up to 200 digits!

What a great job! That pie looks fantastic. Sounds like you tackled a job that could be daunting for your first try. Like when I wanted to learn to knit. I wanted to learn how to knit socks with four needles. Why do things the easy way? No challenge there. And you chose to make a pie that had multiple steps. I just wish we could get Meyer lemons in this part of the country.

It looks beautiful! And kitchen explosions like that can be fun, especially if they still taste good :)

Next time it'll be perfect

I've been making lemon meringue pies for years and I think yours looks GREAT... and about using less filling? I like the filling 'topped out' and the meringue high.. I've never had a lemon pie's meringue 'blow up' (as you put it) and I dont think it would be because of too much filling (since I always fill mine as much as possible!).. I'm thinking perhaps the filling is very thin until its cooled and perhaps you werent carrying it exactly 'level' -could that be a possibility? I know I always worry about keeping it exactly level when its hot so it doesnt 'spill' out.

Try a homemade crust next... makes the pie exceptionally special! Homemade pie crust.. truly a lost art... but so easily mastered ...with a few tries... : )
