Better Breakfast Contest Winner is a holiday favorite!

In honor of Better Breakfast Month (September), Recipe4Living ran a Better Breakfast Contest. With an overwhelming amount of responses, it was hard to choose a winner, but Jackie’s French Toast recipe seemed to stand out from the crowd.

Here is what she had to say:

I enjoy nothing more than sharing my mother’s recipes as she was a wonderful cook. For years, we’ve enjoyed the Overnight Baked French Toast recipe over holidays. Later, I adapted the recipe to add the “caramel roll” touch. This is so easy and wonderful – serve with syrup, whipped cream and fruit, or just fruit. It can also be made with egg beaters! Enjoy every time!

Overnight Baked French Toast

Ingredients

1 C. firmly packed brown sugar
1/2 C. margarine
2 Tbs. light corn syrup
8 slices thickly sliced Italian bread
6 eggs
1 1/2 C. milk
1 tsp. vanilla
1/8 tsp. salt

Directions

In a saucepan, combine brown sugar, margarine and corn syrup. Bring to a full boil, reduce heat to medium and simmer until thickened (approx. 2-3 minutes). Pour mixture into a greased 9×13-inch baking dish. Place bread evenly in pan. Beat eggs and add all other ingredients. Pour over bread. Cover and refrigerate overnight.

In the morning, bake, uncovered 45 minutes in a 350-degree oven, until light brown, and serve with warm syrup.

Serves 8.
